Over the weekend I spent a lot of time curled up in my fleece blanket reading cooking blogs.  I discovered a fantastic one called Smitten Kitchen with great photos and daily posts. http://smittenkitchen.com/
I got inspired to make candied grapefruit rinds last night, then proceeded to burn them to a black sticky goo while I was completely absorbed reading other recipes.
But today I had more luck with a wonderful recipe for edamame salad by Mark Bittman.   Margot, the one-year-old who I babysit, taught me how to pop the little beans out of their shells last week!  The salad was so yummy, I thought I had made enough for three days, then ate it all in one sitting!  Tastes like summer and makes me crave it.
yummy edamame salad
ingredients:
big pile of edamame beans
olive oil
lemon juice
salt
pepper
handful of coarse chopped mint
coarsely shaved hard italian cheese, like parmigiano or romano.
Mix all the ingredients together!  Beautiful!
And these soybean babies help keep you happy too... according to wikipedia: "Fiber-rich foods such as edamame help prevent mood fluctuations by keeping blood-sugar levels steady. Edamame also contains protein, which further helps stabilize blood sugar, and omega-3 fatty acids, which have been shown to combat depression."
I think I can feel them working already!
